Microwave Cooking is a relatively new concept in India. At present, most people use the microwave oven only for reheating food. This book is intended to change that. A microwave oven is not just for reheating or cooking "exotic" dishes; in fact, it can be used to cook our conventional food more effectively, as it saves time and energy. No special skills but little knowledge is necessary for using a microwave oven; and it is definitely safe and no need to be afraid or tentative about using it. A little understanding of how the oven works and some practice is all you need. Conventionally, the food is cooked on conduction method i.e. heat spreads from one particle to another. In microwave cooking, the microwaves penetrate the food and force the water molecules to vibrate rapidly, thus heating up. Deep frying is not possible in a microwave oven.
Having used a microwave oven for seven years now, I have converted several day-to-day, traditional South Indian recipes for microwave cooking. Furthermore, all the experience I have gathered has been put down in this book, sometimes in the form of additional tips. This book contains 100 Recipes, covering most of the South Indian cuisines, and common recipes converted for microwave cooking. As you continue using this book, you will find yourself gaining confidence in using the microwave oven and you will be able to convert more recipes for microwave cooking by yourself. All these recipes have already been given in my earlier books, and now adapted for microwave cooking. Non-Vegetarian recipes, which already I had given in earlier editions of this book, have been replaced with new vegetarian recipes.
